Chocolate dipped strawberries are a fancy,  rich, luxurious dessert.  I recently saw an ad for a company that would deliver 6 dipped strawberries to your loved one for just $20.  Twenty dollars for chocolate dipped strawberries?  While they might be luxurious, they are simple to make, so simple that our children have made them for years just for fun.  Here’s how: 

The recipe is simple.  All you need is strawberries and this Simply Divine Chocolate recipe.  For chocolate strawberries, you will need to follow the option in the recipe for using cocoa butter (here is the one I use) instead of coconut oil.  Chocolate made with cocoa butter will stay solid at room temperature so that you have beautiful, firm, chocolate strawberries and not a gooey mess.

Instructions:  Wash the strawberries and dry them thoroughly.  You can use a salad spinner to help remove water from freshly washed berries or you can wash and lay on a towel to dry for an hour or two. It is best to use berries that are ripe but still very firm.  Don’t use berries with soft spots or that are starting to soften as they won’t hold up well.

Melt chocolate in double boiler (or use freshly made chocolate that has been cooled til just warm) Chocolate should be warm but not hot.  Hold berry by stem and dip into melted chocolate, turning to coat berry.  Place on baking sheet covered in wax or parchment paper.  Place in refrigerator to harden.  Before refrigerating you can dip chocolate covered berry into toppings such as chopped nuts, unsweetened coconut or granola.

Berries will keep in the fridge for up to 24 hours.

So easy, so cheap, so yummy, and so impressive.  That’s a SDE Valentine victory for sure!
