To celebrate cucumber season, here are my favorite salads when I need a quick way to add more raw, enzyme-rich food to any meal. They are ready in 5 minutes, and kid approved. They are easy to transport to a picnic or BBQ. Give them a try. You will be as addicted as we are!

 

 

 

 

 

 

 

 

Cucumber Watermelon Salad

4 cups watermelon, cut into small cubes

1 cucumber, diced

2 T diced red onion

1 handful of sliced fresh mint

Juice of 1 lemon

¼ c extra virgin olive oil, flaxseed oil, or hemp oil

Himalayan or Real Salt and pepper to taste

 

Toss the vegetables and watermelon with remaining ingredients. Enjoy!

 

Cucumber Fennel Salad

 

2 large cucumbers (or equivalent), diced

½ bulb fennel, cut lengthwise and then sliced very thinly

6 dates, chopped

Juice of 1 lemon

¼ c extra virgin olive oil, flaxseed oil, or hemp oil

Himalayan or Real Salt and pepper to taste

 

Toss the vegetables and dates with the remaining ingredients. Enjoy!
